Recipe: Cannabis-Infused Pico de Gallo & Guacamole

Summer is right around the corner, which means the beach days and lake visits have already started! The time for the comforting warmth of savoury curries and soups is over, and the time for bright, fresh, and quenching flavours is rapidly approaching. As far as cuisine in the heat goes, surpassing all the variety Mexican offers is difficult. As far as Mexican cuisine goes, pico de gallo and guacamole are two must-have toppings. Spread them on your taco shells, wrap them up in burritos to go, or pack them with a bundle of tortilla chips and you’ve got yourself one hassle-free cannabis-packed beach day. Pico De Gallo

  • 4 tomatoes
  • 1/2 red onion
  • 2 cloves of garlic
  • 2 tablespoons of cilantro
  • 1/4 jalapeno
  • lime juice to taste
  • 3-5 ml cannabis oil
  • Olive oil to finish

To start this cannabis infused pico, begin by dicing your tomatoes and placing them in a large mixing bowl. Next, chop up your red onion to the desired size, mince the garlic and add both into the bowl. Bundle up fresh cilantro into a tight ball and chop into thin strands. Add the cilantro as well as finely minced jalapeno to the bowl. You can omit the jalapeno but it provides a subtle kick to the pico. Finally, add cannabis oil to your desired potency, and finish the mixing bowl off by pouring in lime, salt and pepper to taste. If the pico needs a little more oil to come together, slowly drizzle in olive oil while mixing gently.

Guacamole

  • 4 ripe avocados
  • 1/2 cup of pico de gallo
  • Salt and pepper to taste

If you’ve made the pico before beginning the guac, you’re in for a super simple recipe. De-pit the avocados and scoop the flesh out into a small mixing bowl. Then, add 1/2 cup of your previously made pico into the bowl and mix until smoothly incorporated. With the pico already infused, a small amount of THC will carry over into your guac. If you skipped the cannabis oil step for the pico or would prefer something a bit stronger, then feel free to add more cannabis oil — mixing in gently.
